There are two great cold noodle traditions in Korea — Pyongyang-style and Hamhung-style — and Woo Lae Oak is Seoul’s most celebrated practitioner of the Pyongyang version: thin buckwheat noodles served in an icy, subtly sweet beef broth, topped with a slice of Korean pear, cucumber julienne, hard-boiled egg, and thinly sliced brisket. The broth is the thing — lightly gelatinous, cold enough to make you shiver, flavoured with a complexity that takes hours to build and is impossible to replicate quickly.
